Ideally I'd be doing this once a week all at once, but unfortunately Eilidh doesn't agree with me. On my 'kitchen days' Eilidh also decides that napping is for losers and just wants to hang with her Mama. Which I'm not complaining about, it's just harder to stock the fridge and cupboards with a cute time waster doing cute time wasting things.
This isn't a list of your basic kitchen stuff, olive oil, butter etc this is other staples like; snacks, jar fillers, breakfast goodies.
First up, freezer treats.
I love a sweet snack as much as the next guy and having something on hand is perfect.
I use this as a base recipe and add flavours to it depending what I have on hand. This week I added Orange Zest, last week I added Cinnamon.
1 cup of pitted Dates (Soak in water for 30mins and drain before using)
1/3 cup of Cashews
1 TBSP Coconut oil
1 TBSP Almond butter
pinch of Sea Salt
Put the drained dates into a food process and blend, then add everything else (apart from the Shredded Coconut) and pulse until you are happy with the consistency. I personally like the Cashews to be a little chunky, but that's my choice and chunky isn't for everyone!
Once blended, roll into balls then roll in the Coconut, place onto a tray and freeze for a couple of hours. Once they have frozen, move them into a jar and keep in the freezer.
