Now that I'm a real life Mama I attend morning coffee groups, which involves eating cake, obviously.
Another thing about being a new Mama is time or a serious lack of it as those new borns take up a lot of it. So if baking needs to be done it must be easy, fast and painless.
This cake needs no mixes, no creaming of butter and no technique other than boiling a kettle and holding a spoon. Oh and the main sweetener is honey. What about time?! 10mins to mix and 30mins to bake (insert Jamie Oliver noises here).
Mandarine and Lemon cake.
Zest of one lemon
1 tablespoon Butter
2 tablespoons of Honey
1/4 teaspoon Salt
3 Mandarines peeled and segmented
1/2 teaspoon Baking Soda
1 cup boiling water
1/4 cup ground Almonds
1 3/4 cup Self Rising Flour
1 mashed ripe Banana
1 tablespoon of honey
Preheat the oven to 180 degrees and line a square cake tin.
Put the lemon zest, butter, honey, mandarines and salt into a bowl. Sprinkle over the baking soda then stir in the boiling water and mix until the butter melts. Sift in the ground almonds and Self Rising flour. Working quickly mix until it just comes together then add the mashed banana and mix through. Tip into the tin and bake for 30mins or until golden brown and a knife comes out clean. Leave in the tin, heat the honey in a small saucepan until it's runny. Using a pastry brush paint the cake. Serve warm with yogurt and baby gossip.
