Many moons ago when I was running a cafe in Glasgow, I baked scones everyday, sometimes even twice a day. I'm basically the (unofficial) queen of scone baking. This recipe is super easy and full proof. You can even mix and match any variety of fruit or flavours you want. Don't have Coconut oil? Just use Butter instead. Feel like savoury scones? Get that Coconut oil outta the way and use 1 cup of grated cheese (just get rid of the fruit, or not?!) and add 1/2 teaspoon of smoked paprika, which is the Husbands favourite (fresh black pepper is mine).

3 cups Self Rising Flour
50 grams hard Coconut Oil
3 Tablespoons Coconut Sugar + extra for sprinkles
3 Tamarillos (or any fruit you have handy), flesh scoped out and cut into smaller bits
up to 2 cups of milk (Almond milk also works well)
Pre-heat the oven to 180 degrees and line a baking sheet with baking paper.
Grate the hard Coconut oil into a bowl then rub in the Flour until it resembles breadcrumbs. Mix in the Coconut sugar and create a well in the centre.
Tip in a cup of milk and mix then keep adding until everything is mixed together and the mixture is firm but a little sticky, although be careful not to over mix. Add in the Tamarillos (or whatever fruit frozen berries also work a treat) and gently mix until they're just mixed in.
Lightly flour a clean work surface, tip the dough out and pat down until the mixture is flat and about 1.5-2cm flat. Dust the top with flour. Using a circle cutter or just a knife, cut out the scones and place onto the baking tray. Sprinkle with a little Coconut sugar. Bake for 15 mins or until the tops are golden and a knife comes out clean. I eat these hot with honey but, jam is pretty tasty too.
* I've added 1/3 cup of coconut bits to the flour + a little sprinkle on top. You don't have to add this and if you don't it won't effect the final outcome, so don't panic!
* I have made these Gluten free before, I've just used the Edmonds Gluten free self-rising flour mix - I've found that it's the best Gluten free mix for scones, sweet or savoury.
