Yup, you read that title correct, I've a recipe for a side salad. Not a cake, muffin or snack, but a side salad. Before you check the browser to make sure you're on the right site, check out this wee recipe I put together one evening. It started out as a trick to get Mark to eat his greens as chard has taken over the veggie garden and he's a little over it. Which in hindsight isn't a bad problem to have, but we were both getting a little sick of eating it. Neccisseicty is the mother of invention I guess.
Rainbow Chard Coleslaw
I used about 8-10 smallish leaves of Chard
1/2 Green Pear
Handful toasted Sunflower seeds
4 TBSP Plan Yogurt
1 tsp Dijon Mustard
Lemon Juice from 1/2 of Lemon
1tsp of Sriracha
A generous pinch of Sea Salt
Finely chop the Chard, I left some of the storks out (fry them in a little butter and eat them with a fried egg, yum!), but it's up to you. Julienne the pear 1/2 then mix together with the Chard in a bowl. Mix all of the dressing ingredients together, tip over the Chard mix and mix together. Done.
We ate the Coleslaw with fried chicken, so good!
